A shrub is a fruit-based vinegar syrup that is used in drinks and cocktails. Mix this one with lemonade and crushed ice for a refreshing drink or mix with soda and vodka for a delicious cocktail.

400 g strawberries, quartered
400 g caster sugar
10 g fresh thyme, whole
400 g apple cider vinegar
Jug, Sterilised bottle, FDM71.960SS, FDM73.850SS, FDP65.860WH, FDP65.180SI, K-Beater, Blender Attachment
Add strawberries, sugar and thyme into the Blender attachment.
Blend on speed Max until smooth.
Strain the mixture through a muslin cloth into a jug.
Add vinegar.
Stir until combined.
Pour into a sterilised bottle.
Chill in the fridge for 72 hours.
Use as desired.
Tip: Put the shrub in a sterilised bottle and store in the fridge for up to one month.
