Strawberry Thyme Shrub

A shrub is a fruit-based vinegar syrup that is used in drinks and cocktails. Mix this one with lemonade and crushed ice for a refreshing drink or mix with soda and vodka for a delicious cocktail. Put the shrub in a sterilised bottle and store in the fridge for up to one month.

400 g strawberries, quartered

400 g caster sugar

50 g water

10 g fresh thyme, whole

400 g apple cider vinegar


Utensils

Jug, Sterilised bottle, KWL90.004SI, KWL90.124SI, K-Beater, Blender Attachment

Instructions

Step 1

Working in two batches, add strawberries and sugar into the Blender attachment.

Blend for 30 seconds on speed Max until smooth.

Remove the attachment from the machine.

Transfer the blended strawberries into the warming bowl.

Step 2

Fit the K-Beater.

Add water and thyme into the warming bowl.

Heat for 10 minutes on heat setting 7,  on speed Stir 3, until the liquid has reduced.

Let cool slightly and then remove the thyme.

Add vinegar.

Mix for 2 minutes on heat setting Off, on speed Min, until combined.

Step 3

Strain the mixture through a muslin cloth into a jug and let cool.

Pour into a sterilised bottle.

Chill in the fridge.

Use as desired.
