Sticky Honey and Garlic Chicken Wings with Blue Cheese Dip

For the chicken wings

  • 1000 g chicken wings

  • 2 Tbsp cornflour

  • 1 tsp fine sea salt

For the glaze

  • 4 garlic cloves

  • 1 green chili, coarsely chopped

  • 0.5 Tbsp tomato purée

  • 0.5 Tbsp vegetable oil

  • 0.5 Tbsp apple cider vinegar

  • 1 Tbsp dark soy sauce

  • 2 Tbsp honey

For the blue cheese dip

  • 1 garlic clove

  • 5 g fresh dill

  • 5 g fresh chives, coarsely chopped

  • 60 g blue cheese

  • 1 Tbsp apple cider vinegar

  • 1 tsp honey

  • 0.25 tsp fine sea salt

  • 0.25 tsp ground black pepper

  • 200 g natural yoghurt

Instructions

Step 1

Preheat the oven to 180ºC / 160ºC fan.

Line a baking tray with parchment paper.

Pat the chicken wings dry.

Add the chicken wings, cornflour and salt into a bowl.

Toss well until evenly coated.

Step 2

Making the glaze

Fit the Knife Blade.

Add 4 garlic cloves, green chilli, tomato purée, vegetable oil, apple cider vinegar, dark soy sauce and honey into the appliance bowl.

Blend for 10 seconds until combined.

Scrape the sides of the bowl with a spatula.

Blend until smooth for 10 seconds.

Step 3

Transfer half of the glaze into the bowl with the chicken wings and mix well until evenly coated.

Lay the chicken wings, skin side up, on the baking tray in a single layer.

Bake for 35 minutes at 180ºC / 160ºC fan until golden.

Step 4

Making the blue cheese dip

Clean the appliance bowl and fit the Knife Blade.

Add 1 garlic clove, dill, chives, blue cheese, apple cider vinegar, honey, fine sea salt, pepper and 2 Tbsp natural yoghurt.

Pulse until very finely chopped.

Step 5

Add the remaining yoghurt to a serving bowl.

Add the blue cheese dip and stir to combine.

Remove the chicken wings from the oven and brush with the remaining glaze.

Increase the oven temperature to 220ºC / 200ºC fan.

Bake the chicken for 15 minutes at 220ºC / 200ºC fan until golden brown.

 

To serve

Serve with the dip.
