1 traybake or 12 cakes
200 unsalted butter, cubed, at room temperature
200 g golden caster sugar
100 g plain flour
100 g ground almonds
1 tsp ground cinnamon
180 g egg whites
150 g raspberries
100 g white chocolate chips
Traybake tin large, Saucepan, Bowl medium, Bowl small, KHC30.000WH, KHC30.050GY, KHC30.070GY, Whisk Tool
Preheat the oven to 180ºC.
Grease a large traybake and line with parchment paper.
Add butter into a saucepan.
Heat on a medium heat until light brown with a layer of foam on top.
Pour the melted butter into a small bowl and set aside.
Add sugar, flour, almonds and cinnamon into a clean bowl, mix by hand until combined and set aside.
Transfer the mixture into the traybake tin and level with a spatula.
Scatter raspberries and chocolate chips all over the top.
Bake for 40 minutes at 180ºC until golden brown.
Remove from the oven and let cool in the tin.
Cut into squares.
Dust with icing sugar or serve with clotted cream (optional).
Serve.
