sponge cake, as needed

125 g mascarpone

280 g whipping cream

20 g caster sugar

0.5 tsp vanilla extract

150 g oolong tea, orange flavoured, cooled

3 Tbsp chocolate shavings

1 orange, zest only

Instructions

Step 1

Fit the Creaming Beater.

Add mascarpone cheese into the appliance bowl.

Mix for 1 minute on speed 2 until softened and then scrape the bowl.

Step 2

Remove the Creaming Beater and fit the Whisk Tool.

Add whipping cream, sugar and vanilla into the appliance bowl.

Whisk for 1 minute 10 seconds on speed 6 until thickened.

Tip: Start the machine on speed Min and gradually increase speed.

Transfer the mixture into a piping bag and set aside.

Step 3

Add the cooled tea into a small bowl.

Cut out about 12 x 3 cm rounds and 24 x 3.5 cm rounds from the sponge cake.

Tip: Cut to size according to your serving glass.

Add some of the sponge discs into the tea and soak briefly for 2-3 seconds.

Transfer the soaked discs to a plate or tray.

Repeat the same with the remaining sponge discs.

Add 2 tsp of the remaining tea into the base of each shot glass.

Add the smallest size sponge disc into each glass and press into the base.

Pipe a thin layer of the mascarpone cream on top and top with the larger size sponge disc.

Repeat the layering process once more until you have three layers of sponge in total.

Finish with a layer of the mascarpone cream and level the top with a spatula.

Garnish with the shaved chocolate and orange zest.

 

Serve.

 

Tip: You can use ready made sponge cake or make your own one. Cut out about 12 x 3 cm rounds and 24 x 3.5 cm rounds from the sponge cake. The size and number may vary, depending on your serving glasses size. Make an orange oolong by brewing 2 tsp of orange oolong tea in 250 ml of freshly boiled water.
