Pulled Pork

Pulled pork is great for serving a crowd or for weekly meal prep – especially as there’s so much you can do with it. Once the meat has been slow cooked, use the K-Beater to shred the meat in small 200 g batches. Serve the pulled pork in tacos, with rice or in a toasted brioche bun with slaw, spicy condiments, and pickles. Try our BBQ sauce recipe with this method.

1400 g pork shoulder, boneless, fat removed

200 g onion, quartered

2 garlic cloves, crushed

650 g chicken stock, hot

100 g apple cider vinegar

200 g BBQ sauce

salt, as needed

ground black pepper, as needed

1.5 Tbsp cornflour

2.5 Tbsp water

Instructions

Step 1

Add pork, onion garlic, stock, cider, sauce, salt, pepper, cornflour and water into the appliance bowl, fit the splashguard.

Cook for 5 hours at 98ºC, speed Off, until pork is tender.

Transfer the cooked pork into a clean bowl and set aside to rest.

Strain the cooking liquid through a sieve into a clean bowl.

Remove onion and garlic, skim the fat and discard.

Step 2

Fit the Stir Tool.

Add the strained cooking liquid into the appliance bowl.

Heat for 2 minutes at 110ºC on speed Stir 1 until hot.

Cook for 10 minutes at 105ºC on speed Stir 4 until reduced and thickened.

Transfer the sauce into a clean bowl.

Step 3

Cut the cooked pork into 12 evenly sized pieces, removing any gristles and fat.

Fit the K-Beater

Working in batches, add 200 g pork into the appliance bowl.

Mix 10-15 seconds on speed Min until shredded.

Transfer the shredded meat into a clean bowl.

Repeat the process with the remaining meat.

Mix for 10-15 seconds on speed Min until shredded.

Combine the shredded meat with some of the sauce.

Serve in tacos, with rice or in a toasted brioche bun with slaw, spicy condiments, and pickles.

Serve the remaining sauce alongside the dish.
