Puff Pastry

This basic puff pastry recipe is a flaky light pastry made from dough with a layer of butter, which is repeatedly rolled and folded. It is these laminations that give the flaky texture after baking. It can be used for anything from apple turnovers, cheese straws and sausage rolls.

100 g water

200 g plain flour

15 g unsalted butter, melted, cooled

3 g salt

150 g unsalted butter, whole, cold

Instructions

Step 1

Fit Dough Tool.

Add water, flour, melted butter and salt into the appliance bowl.

Knead for about 5 minutes on speed Min until the dough has formed.

Wrap the dough in plastic wrap and chill in the fridge for 30 minutes.

Step 2

Line a work surface with parchment paper.

Place a block of butter on top and cover with another piece of parchment paper.

Gently roll out the butter into a rectangle, about 15 x 10 cm.

Step 3

Transfer the chilled pastry to a lightly floured work surface.

Gently roll out the pastry into a rectangle.

Place the butter into the centre of the pastry.

Fold the edges of the pastry over to enclose the butter completely.

Tightly pinch the seams to seal.

Roll out the pastry until about 3-5 mm thick.

Fold one edge to the centre.

Fold the other edge to cover the first fold.

Turn the dough 90°.

Immediately repeat the rolling and folding process.

Wrap the dough in plastic wrap and chill in the fridge for 30 minutes.

Repeat the folding and chilling process twice more, a total of 6 folds.

Use as desired.
