This recipe delivers the authentic patatas bravas experience: perfectly cooked potatoes – crispy outside, soft inside – drenched in a smoky and spicy tomato sauce. It’s an essential Spanish tapa, serving 8 people as part of a varied selection.

For the potatoes
1400 g potatoes, peeled, diced 3 cm
water, as needed, cold
1 Tbsp fine sea salt
For the tomato sauce
60 g olive oil
150 g onion, finely chopped
2 garlic cloves, sliced
1 bay leaf
0.25 tsp chilli flakes
1 tsp sweet smoked paprika
0.25 tsp ground cumin
400 g tinned chopped tomatoes
50 g water
1 tsp fine sea salt
0.5 tsp ground black pepper
1 tsp granulated sugar
1 tsp dried oregano
1 Tbsp sherry vinegar
To finish
100 g olive oil
1 tsp salt
Baking tray large, Frying pan, KCL95.424SI, KCL96.004DG, Stir Tool, Food Processor, Knife Blade
Add potatoes into a pot and cover with water.
Add 1 Tbsp salt.
Cook on a high heat until boiling.
Turn the heat off and drain the potatoes into a colander.
Place the potatoes in a single layer on a baking tray and set aside.
Fit the Stir Tool and Stir Assist Clip.
Add 60 g olive oil into the appliance bowl.
Heat for 1 minute at 120ºC on speed Off until hot.
Add onion.
Cook for 5 minutes at 120ºC on speed Stir 2 until translucent.
Add garlic, bay leaf, chilli, paprika and cumin.
Cook for 5 minutes at 120ºC on speed Stir 2 until fragrant.
Add tomatoes, water, 1 tsp salt, pepper and sugar.
Cook for 20 minutes at 102ºC on speed Stir 3 until the sauce thickens.
Add oregano and vinegar.
Mix for 1 minute on speed Stir 1 until combined.
Remove the bowl form the machine and let cool for 15 minutes.
Fit the Knife Blade to the Food Processor attachment.
Transfer the tomato sauce into the attachment.
Mix for 1 minute on speed 2 until smooth.
Remove the attachment from the machine.
Add 100 g oil into a large frying pan.
Heat on a medium heat until hot.
Add the cooled potatoes.
Fry, tossing occasionally, on a medium heat until potatoes are cooked through and crispy.
Season with salt.
Transfer the potatoes onto a serving plate and spoon over the bravas sauce.
Serve.
Tip: For best results, use a very floury potato and allow the potatoes to cool completely, which helps to remove excess moisture.
