No Bake Cheesecake

This no-fuss cheesecake is so simple that it is easy to do but will always impress your friends and guests, try different topping to give it your individual twist. Please remember not to over whisk the cream, keep an eye on it.

70 g unsalted butter, melted

180 g biscuits, crushed

350 g whipping cream

300 g cream cheese

100 g icing sugar

2 tsp vanilla extract

1 lemon, zest only

Round tin 20 cm (8"), Whisk Tool

Instructions

Step 1

Grease a tin and line with parchment paper.

Add biscuits and butter into a clean bowl and mix until combined.

Spoon the biscuit base into the tin, spread out evenly, and press down until firm.

Chill in the fridge until needed.

Step 2

Fit the splashguard, then fit the Whisk Tool.

Add cream into the appliance bowl.

Whisk for about 2 minutes on speed 5 until soft peaks form.

Add cream cheese and sugar.

Mix for about 2 minutes on speed 5 until combined and smooth.

Add vanilla and lemon zest.

Whisk for about 30 seconds on speed 2 until incorporated.

Pour the mixture over the chilled biscuit base and smooth with a spatula.

Chill in the fridge for about 4 hours.

Top with fruit, biscuits or coulis.

 

Serve.
