Miso Coconut Noodle Soup

Inspired by Malaysian laksa, this soup is fragrant with ginger, garlic, chilli and coconut, the perfect accompaniment to soft, chewy udon noodles. Once cooled, store the soup in an air-tight container in the fridge for up to 5 days, or freeze for up to 3 months.

  • fresh coriander, as needed, leaves only

  • red chilli, as needed, sliced

  • black sesame seeds, as needed

2 Tbsp coconut oil

150 g onions, coarsely chopped

150 g red pepper, deseeded, coarsely chopped

150 g carrots, coarsely chopped

1 tsp fine sea salt

20 g fresh ginger, peeled, finely chopped

4 garlic cloves, finely chopped

1 red chilli, deseeded, finely chopped

1 Tbsp white miso

800 g tinned coconut milk

2 limes, juice of

10 g fresh coriander

400 g udon noodles, cooked

4 Serving bowls, KCL96.004DG, KCL95.424SI, KCL95.429SI, KCL95.004SI, Blender Attachment, Stir Tool

Instructions

Step 1

Fit the Stir Tool and Stir Assist Clip.

Add coconut oil into the appliance bowl.

Heat for 1 minute at 120°C, speed Off, until hot.

Add onion, red pepper, carrots and salt.

Cook for 10 minutes at 110°C on speed Stir 2, until softened.

Add ginger, garlic, chilli and miso.

Cook for 3 minutes at 110°C on speed Stir 2, until fragrant.

Add coconut milk.

Cook for 10 minutes at 105°C on speed Stir 2, until thickened.

Remove the bowl from the machine and let cool for 5 minutes.

Step 2

Transfer the soup into the Blender attachment.

Add lime juice and coriander.

Blend for about 1 minute on speed 5 until smooth.

Remove the attachment from the machine.

Step 3

Divide the noodles between serving bowls.

Top with the blended soup.

Garnish with fresh coriander, chilli and black sesame seeds.
