Mini Raspberry Cheesecakes

10 mini cheesecakes

80 g biscuits, broken up

40 g unsalted butter, melted

150 g cream cheese

100 g whipping cream

30 g caster sugar

0.5 tsp vanilla extract

100 g raspberries

raspberries, as needed, for decoration

Instructions

Step 1

Fit the Knife Blade.

Add biscuits into the appliance bowl.

Pulse until crumbs form.

Add butter.

Pulse until combined.

Spoon 1 Tbsp of the biscuit base into each mini dessert cup and press down.

Chill in the fridge until needed.

Step 2

Clean the appliance bowl and fit the Knife Blade.

Add cream cheese, whipping cream, caster sugar and vanilla extract into the appliance bowl.

Whisk for about 30 seconds until smooth and then scrape the bowl.

Add raspberries.

Whisk for about 20 seconds until combined.

Spoon or pipe 30 g of the cheesecake mixture into each cup on top of the chilled biscuit base.

Decorate with raspberries.
