A sweet buttery bun also known as ‘pain au lait’, this is fairly simple to make but can be made more challenging by shaping into longer rolls and experimenting with slashing on top.

300 g milk
7 g instant yeast
500 g plain flour
50 g caster sugar
1.5 tsp salt
125 g unsalted butter, cubed, room temperature
1 egg, beaten
2 Baking trays, KZM35.000GY, KZM35.000RD, KZM35.000GR, Dough Tool
Line baking trays with parchment paper.
Fit the splashguard, then fit the Dough Tool.
Add milk, yeast, flour, sugar and salt into the appliance bowl.
Knead for 2 minutes on speed 2 until combined then scrape the bowl.
Knead for 2 minutes on speed 2 until combined.
Add butter.
Knead for 5 minutes on speed 2 until the dough has formed.
Remove the bowl from the machine and cover with a damp tea towel.
Prove for 1 hour 30 minutes until doubled in size.
Transfer the dough to a lightly floured work surface.
Divide the dough into 12 equal pieces.
Take one piece and gently pull the edges into the centre.
Turn the dough over and shape into a ball.
Repeat the same process with the remaining dough pieces.
Transfer the dough balls to the baking tray and space them apart evenly.
Cover the dough with a damp tea towel.
Let rest for 45 minutes.
Preheat the oven to 220ºC.
Brush the dough balls with beaten egg.
Bake for 20 minutes at 220ºC until golden brown.
Remove from the oven and let cool on a cooling rack.
