Low Sugar Blueberry and Basil Frozen Yoghurt

This quick, fragrant dessert can be made up to a week before it is needed, just keep covered in the freezer. This recipe uses maple syrup instead of sugar. Taste the fruit before making this recipe, if the fruit is sweeter, you could use less syrup.

150 g blueberries

5 g fresh basil, finely chopped

20 g water

250 g whipping cream

250 g natural yoghurt

4 Tbsp maple syrup

Airtight container, Bowl medium, KCL96.004DG, KCL95.429SI, KCL95.004SI, Creaming Beater, Whisk Tool

Instructions

Step 1

Fit the Creaming Beater.

Add blueberries, basil and water into the appliance bowl and fit the splashguard.

Cook for 12 minutes at 94ºC, on speed Stir 2, until the blueberries have softened.

Strain the mixture into a clean bowl and let cool.

Step 2

Clean the appliance bowl and fit the Whisk Tool.

Add cream, yoghurt and maple syrup into the appliance bowl and fit the splashguard.

Whisk for 1 minute on speed 3, until thickened.

Add the blueberry mixture.

Whisk for 30 seconds on speed 3, until combined.

Transfer the yoghurt mixture into an airtight container and cover with a lid.

Freeze overnight until solid.

Serve.
