Loaded Mashed Potatoes

Creamy, cheesy mashed potatoes full of delicious bacon and spring onions. Serve alongside roast meat or at a BBQ.

For the bacon

  • 100 g lardons

  • 2 garlic cloves, peeled, minced

For the potatoes

  • 600 g potatoes, cubed 3 cm

  • water, as needed

  • 1 tsp salt

For the cheese sauce

  • 40 g whole milk, at room temperature

  • 20 g whipping cream, at room temperature

  • 15 g unsalted butter, melted

  • 200 g cheddar cheese, grated

  • 10 g chives, finely chopped

  • 30 g spring onions, finely sliced

  • salt, as needed

  • ground black pepper, as needed

For the breadcrumb topping

  • 50 g breadcrumbs

  • 20 g Parmesan cheese

  • 1 tsp garlic powder

  • 5 g fresh parsley, leaves only, finely chopped


Utensils

Mixing bowl, Frying pan, Saucepan, Baking dish, Bowl small, HMP40.000GY, HMP40.000RD, HMP40.000GR, Beaters

Instructions

Step 1

Add oil into a frying pan.

Heat on a medium-high heat until hot.

Add lardons and garlic.

Cook on a medium-high heat until crispy.

Remove from the heat and set aside.

Step 2

Add potatoes into a saucepan and enough water to cover the potatoes.

Add salt.

Cook for 15 minutes on a medium-high heat until tender.

Drain the water and cover the saucepan with a kitchen towel to steam dry for 5 minutes.

Step 3

Transfer the potatoes into a mixing bowl.

Fit the Beaters.

Mix for 1 min on speed Min until smooth.

Add milk, cream, butter, cheddar, chives, spring onions, salt and pepper.

Add the cooked lardons.

Mix for 20 seconds on speed Min until combined.

Transfer the potato mixture into a baking dish.

Step 4

Preheat the oven to 200°C.

Add breadcrumbs, Parmesan, garlic powder and parsley into a small bowl and mix to combine.

Sprinkle the breadcrumb mixture onto the potatoes.

Bake for 10 minutes at 200°C until golden.

 

Serve.

 

Tip: This recipe makes enough for 6-8 people so if you need less, you can half the recipe and use a smaller baking dish or, if you need more, work in batches and use 2 baking dishes.
