Lemon Biscuits with Edible Flowers

250 g salted butter, cubed, softened

125 g caster sugar

1 lemon, zest of

2 Tbsp lemon juice

250 g plain flour

100 g rice flour

edible flowers, as needed

caster sugar, as needed


Utensils

2 Baking trays, Round cutter 5 cm, KVC3100S, KVC3100W, KVL4100W, KVL85.004SI, Creaming Beater, K-Beater

Instructions

Step 1

Line baking trays with parchment paper.

Fit the Creaming Beater.

Add butter, sugar, lemon zest and lemon juice into the appliance bowl.

Mix for 1 minute on speed 2 until smooth.

Step 2

Remove the Creaming Beater and fit the K-Beater.

Add plain flour and rice flour into the appliance bowl.

Mix for 1 minute on speed 2 until a soft dough has formed.

Step 3

Transfer the dough onto a lightly floured work surface.

Roll out until 2 cm thick.

Cut out rounds using the cutter.

Place the dough rounds on the baking trays.

Gently press in the flowers.

Chill in the freezer for 20 minutes.

Step 4

Preheat the oven to 140ºC.

Bake the biscuits for 20 minutes on 140ºC until light in colour.

Remove from the oven and sprinkle with sugar.
