Lemon Biscuits with Edible Flowers

Fun and tasty biscuit to make to celebrate spring. You can get edible flowers from farm shops or online.

250 g salted butter, cubed, softened

125 g caster sugar

1 lemon, zest of

2 Tbsp lemon juice

250 g plain flour

100 g rice flour

edible flowers, as needed

caster sugar, as needed

2 Baking trays, Round cutter 5 cm, CCL401WH, CCL50.A0CP, CCL405WH, CCL400WH, CCL450WH, CCL455SI, CCL450SI, CCL456SI, Knife Blade, MaxBlade

Instructions

Step 1

Line the baking trays with parchment paper.

Fit the Knife Blade (or Max Blade for kCook Multi)

Add butter, sugar, lemon zest and juice into the appliance bowl, attach the lid without the filler cap.

Mix for 1 minute on speed 6 until smooth.

Add plain flour and rice flour.

Mix for 2 minutes on speed 4 until a soft dough has formed. 

Step 2

Transfer the dough onto a lightly floured work surface.

Roll out until 2 cm thick.

Cut out rounds using the cutter.

Place the dough rounds on the baking trays.

Gently press in the flowers.

Chill in the freezer for 20 minutes.

Step 3

Preheat the oven to 140ºC.

Bake the biscuits for 20 minutes at 140ºC until light in colour.

Remove from the oven and sprinkle with sugar.
