These no bake lemon and coconut squares are an easy, oven-free treat with a firm, chewy texture and a fresh, zesty flavour. Topped with a simple lemon icing for a bright finish, they are quick to prepare and make a great summer treat. The hardest part is just waiting for them to set before slicing and serving!

For the base
200 g unsalted butter, melted
270 g condensed milk
540 g biscuits, crushed
170 g desiccated coconut
2 lemons, zest of

400 g icing sugar
4 Tbsp lemon juice
yellow food colouring, as needed

lemon zest, as needed
traybake tin 23 cm x 33 cm (9" x 13"), KVC3100S, KVC3100W, KVL4100W, KVL4110S, KVL4100S, Creaming Beater, K-Beater
Making the base
Line a traybake tin with parchment paper and set aside.
Fit the Creaming Beater.
Add condensed milk and melted butter into the appliance bowl, fit the splashguard.
Mix for 1 minute on speed Min until combined.
Add crushed biscuits, desiccated coconut and lemon zest.
Mix for 1 minute on speed Min until combined.
Transfer the mixture into the prepared tin and level with a spatula.
Chill for 30 minutes in the fridge until set.
Making the icing
Clean the appliance bowl and fit the K-Beater.
Add icing sugar, lemon juice and a few drops of yellow food colouring into the appliance bowl, fit the splashguard.
Mix for 5 minutes on speed 1 until the icing is thick and pastel yellow.
Transfer the icing on top of the chilled biscuit base and level with a spatula.
Chill in the fridge for 2 hours until set.
Cut into squares.
Garnish with lemon zest.
Serve.
