For the dough
60 g olive oil
60 g unsalted butter
150 g onion, very finely chopped
350 g plain flour
950 g whole milk
0.5 tsp fine sea salt
0.5 tsp ground black pepper
0.25 tsp ground nutmeg
150 g cured ham, finely diced
For the coating
2 eggs, beaten
200 g panko breadcrumbs
sunflower oil, as needed, for frying

Fit the Stir Tool and Stir Assist Clip.
Add olive oil and butter into the appliance bowl.
Heat for 2 minutes at 110ºC on speed Off until melted.
Add onion.
Cook for 5 minutes at 110ºC on speed Stir 2 until translucent.
Remove the Stir Tool and Stir Assist Clip, and fit the Creaming Beater.
Add 200 g plain flour into the appliance bowl.
Cook for 4 minutes at 95ºC on speed Stir 1 until smooth.
Fit the splashguard.
Slowly add the milk while the machine is running.
Mix for 3 minutes on speed Stir 1 until combined.
Add salt, pepper and nutmeg.
Cook for 15 minutes at 102ºC on speed Stir 1 until the mixture has thickened.
Add ham.
Mix for 2 minutes on speed Stir 1 until combined.
Transfer the dough into an oiled bowl and chill in the fridge overnight.
Add 150 g plain flour, eggs and panko breadcrumbs into three clean bowls.
Transfer the dough to a work surface and divide into 24 equal pieces.
Roll each piece into a small log.
Take one dough log and roll in flour, followed by egg and breadcrumbs.
Repeat the same process with the remaining dough logs.
Line a plate with paper towel.
Fill a large, heavy-based saucepan with oil, no more than 1/3 full.
Heat on a high heat until the oil reaches 175ºC or until bubbling gently.
Using a heatproof slotted spoon, carefully lower 12 croquetas into the hot oil, frying in smaller batches if your pot is smaller to avoid overcrowding.
Fry for 5 minutes on a medium-high heat until golden brown.
Using a heatproof slotted spoon, transfer the croquetas onto the lined plate.
Repeat the same frying process with the remaining croquetas.
Serve.
Tip: This recipe makes 24 croquetas, serving 8 as part of a tapas selection.
