For the sponge
120 g whole milk
4 Earl Grey tea bags
115 g unsalted butter, cubed, softened
40 g runny honey
150 g caster sugar
2 eggs
190 g plain flour
0.25 tsp salt
1 tsp baking powder
1 lemon, zest of
For the syrup
20 g runny honey
20 g lemon juice
Saucepan, Bowl small, Loaf tin 23 cm (9"), KHC30.000WH, KHC30.050GY, KHC30.070GY, K-Beater
Add milk into a saucepan.
Heat on a medium heat until just simmering.
Remove the saucepan from the heat and add Earl Grey tea bags.
Leave to infuse for 30 minutes.
Making the sponge
Preheat the oven to 160ºC.
Grease a loaf tin and line with parchment paper.
Fit the K-Beater.
Add butter, honey and sugar into the appliance bowl.
Mix for about 3 minutes on speed 2 until combined.
Add eggs, flour, baking powder, salt and lemon zest.
Mix for about 2 minutes on speed 2 until smooth.
Add the infused milk.
Mix for about 2 minutes on speed Min until combined.
Transfer the batter into the tin.
Bake for 1 hour at 160ºC until a skewer inserted comes out clean, covering with foil to prevent burning, if necessary.
Remove from the oven and let cool in the tin for 10 minutes.
Making the syrup
Add honey and lemon juice into a small bowl and stir to combine.
Place the cake on a cooling rack.
Brush the honey mixture over the cake while it is still warm.
Let cool completely.
