Instructions

Step 1

Making the dough

Grease a large bowl.

Fit the splashguard, then fit the Dough Tool.

Add milk, 85 g butter and 1 Tbsp vanilla extract into a saucepan.

Heat on a medium-high heat, stirring occasionally, until butter has melted.

Transfer the mixture into the appliance bowl.

Add plain flour, strong white bread flour, caster sugar, light brown sugar, yeast, cinnamon, salt and egg.

Knead for 5 minutes on speed 2 until the dough has formed.

Transfer the dough into the greased bowl and cover with a damp tea towel.

Prove for 1 hour 30 minutes until doubled in size.

Step 2

Making the cinnamon butter

Clean the appliance bowl, fit the splashguard, then fit the K-Beater.

Add 100 g unsalted butter, dark brown sugar and cinnamon into the appliance bowl.

Mix for 1 minute on speed 2 until combined.

Transfer the cinnamon butter into a clean bowl.

Step 3

Place the dough on a lightly floured work surface.

Flatten the dough slightly, bring the left side over the right side.

Fold the right side over the left side.

Roll the dough and shape into a ball.

Cover the dough with a tea towel and let rest for 10-20 minutes.

Step 4

Grease a baking tray.

Roll out the dough into a 5 mm thick rectangle.

Spread the cinnamon filling evenly over the dough.

Roll the dough into a log, starting from the long side.

Divide the dough into 12 equal pieces.

Place the buns on the baking tray, spiral side up and space them apart evenly.

Cover with a damp tea towel and let rest for 30 minutes.

Step 5

Preheat the oven to 180ºC.

Bake the buns for 25 minutes at 180ºC until golden brown, covering with foil after 15 minutes to prevent burning.

Remove from the oven and let cool in the tin.

Step 6

Clean the appliance bowl, fit the splashguard, then fit the K-Beater.

Add soft cream cheese, 90 g unsalted butter, icing sugar and vanilla extract into the appliance bowl.

Mix for 20 seconds on speed 3 until smooth.

Tip: Start on speed 1 and gradually increase speed.

Spread the frosting over the slightly warm buns.

Serve.
