Cinnamon Buns with Cream Cheese Frosting

This recipe for soft and fluffy cinnamon buns topped with cream cheese frosting flavoured with vanilla will be a family favourite once you have tried them. Serve them slightly warm from the oven for the ultimate home baked feel-good treat.

For the dough

  • 220 g whole milk

  • 85 g unsalted butter, cubed , softened

  • 1 Tbsp vanilla extract

  • 420 g plain flour

  • 60 g strong white bread flour

  • 60 g caster sugar

  • 40 g light brown sugar

  • 9 g instant yeast

  • 1 tsp ground cinnamon

  • 1 tsp salt

  • 1 egg, beaten

For the cinnamon butter

  • 100 g unsalted butter, cubed, softened

  • 140 g dark brown sugar

  • 2 Tbsp ground cinnamon

For the frosting

  • 120 g soft cream cheese, at room temperature

  • 90 g unsalted butter, cubed, softened

  • 100 g icing sugar

  • 1 tsp vanilla extract


Utensils

2 Baking trays, Bowl large, Bowl small, KHC30.000WH, KHC30.050GY, KHC30.070GY, Dough Tool, K-Beater

Instructions

Step 1

Add milk, 85 g butter and 1 Tbsp vanilla extract into a saucepan.

Heat on a medium-high heat, stirring occasionally, until the butter has melted.

Step 2

Grease a large bowl and set aside.

Fit the Dough Tool.

Transfer the milk mixture into the appliance bowl.

Add plain flour, strong white bread flour, caster sugar, light brown sugar, instant yeast, ground cinnamon, salt and egg.

Knead for about 5 minutes on speed Min until the dough has formed.

Place the dough into the greased bowl and cover with a damp tea towel.

Prove for 1 hour 30 minutes until doubled in size.

Step 3

Making the cinnamon butter

Clean the appliance bowl and fit the K-Beater.

Add 100 g unsalted butter, dark brown sugar and cinnamon into the appliance bowl.

Mix for about 1 minute on speed 2 until combined and then scrape the bowl.

Mix for about 1 minute on speed 2 until combined.

Transfer the cinnamon butter into a clean bowl.

Step 4

Transfer the dough onto a lightly floured work surface.

Flatten the dough slightly, bring the left side over the right side.

Fold the right side over the left side.

Roll the dough and shape into a ball.

Cover the dough with a tea towel and let rest for 10-20 minutes.

Step 5

Grease a baking tray and set aside.

Roll out the dough into a rectangle until 5 mm thick.

Spread the cinnamon butter evenly over the dough.

Roll the dough into a log, along the longest edge.

Divide the dough into 12 equal pieces.

Place the buns on the baking tray, spiral side up and space them apart evenly.

Cover with a damp tea towel and prove for 30 minutes until doubled in size.

Step 6

Preheat the oven to 180ºC.

Bake for 15 minutes at 180ºC until the buns start to colour.

Cover with foil and bake for 10 minutes at 180ºC until golden brown.

Remove from the oven and let cool in the tin.

Step 7

Making the frosting

Clean the appliance bowl and fit the K-Beater.

Add soft cream cheese, 90 g unsalted butter, icing sugar and vanilla extract into the appliance bowl.

Mix for about 1 minute on speed 2 until combined and then scrape the bowl.

Mix for about 20 seconds on speed 3 until smooth.

Spread the frosting over the slightly warm buns.

Tear apart to serve.
