For dough
150 g icing sugar
225 g unsalted butter, cubed, softened
300 g plain flour
55 g cocoa powder
1 Tbsp whole milk
For the icing
300 g icing sugar
50 g unsalted butter, cubed, softened
100 g smooth peanut butter
2 Tbsp whole milk
Baking tray, Piping bag, Round cutter 5 cm, KHC30.000WH, KHC30.050GY, KHC30.070GY, K-Beater, Whisk Tool
Fit the K-Beater.
Add icing sugar, butter, flour, cocoa powder and milk into the appliance bowl.
Mix for about 3 minutes on speed 4 until the dough comes together.
Wrap the dough in plastic wrap and chill in the fridge for 30 minutes.
Making the icing
Clean the appliance bowl and fit Whisk Tool.
Add icing sugar, butter, peanut butter and milk into the appliance bowl.
Whisk for about 1 minute on speed 4 until the mixture starts to come together.
Whisk for about 2 minutes on speed Max until smooth.
Transfer the icing into a piping bag and set aside.
Preheat the oven to 190ºC.
Line a baking tray with parchment paper.
Transfer the dough to a lightly floured work surface.
Roll out the dough until 5 mm thick.
Cut out the dough using the cutter.
Place the dough rounds on the baking tray.
Bake for 20 minutes at 190ºC until set.
Remove from the oven and let cool.
Pipe the icing onto half of the biscuits.
Place the other half of the biscuits on top of the icing.
Serve.
