60 g unsalted butter, softened, cubed
2 tsp white miso paste
85 g banana, coarsely chopped
50 g dark brown sugar
50 g caster sugar
0.5 tsp vanilla bean paste
1 egg
100 g plain flour
0.25 tsp baking powder
1 pinch bicarbonate of soda
1 pinch fine sea salt
1.5 Tbsp dark cocoa powder
100 g milk chocolate, chopped
vanilla ice cream, as needed, to serve
Round tin 25 cm (10"), CHP80.000BK, CHP80.000SI, Knife Blade
Grease the tin lightly.
Fit the Knife Blade.
Add the butter, white miso paste, banana, dark brown sugar and caster sugar into the chopper bowl and blend for about 20 seconds, or until smooth and creamy.
Add the vanilla paste and egg and blend for another 20 seconds until light and fluffy.
Tip in the flour, baking powder, bicarbonate of soda and cocoa powder and pulse until just combined.
Transfer the mixture into a clean bowl, add the chopped chocolate and fold it into the mixture by hand.
Spoon into the prepared tin and chill in the fridge for 30 minutes.
Preheat the oven to 180ºC.
Bake the cookie dough for about 12 minutes, or until the edges are golden and the centre is still soft and gooey.
Let the cookie dough cool in the tin for 5-10 minutes before serving.
To serve
Serve with a scoop of vanilla ice cream.
