2 Tbsp olive oil

1 Tbsp unsalted butter

600 g chicken thighs, skinned, boned, cubed (3 cm)

salt, as needed

ground black pepper, as needed

150 g onion, sliced

300 g red pepper, deseeded, sliced

100 g green pepper, deseeded, sliced

100 g yellow pepper, deseeded, sliced

2 garlic cloves, crushed

100 g white wine

200 g tomatoes, diced

1 Tbsp tomato purée

0.5 Tbsp cornflour

1 Tbsp water

Instructions

Step 1

Fit the Stir Tool and Stir Assist clip.

Add 1 Tbsp olive oil and butter into the appliance bowl.

Heat for 2 minutes at 120ºC, speed Off until hot. 

Add chicken, salt and pepper.

Cook for 5 minutes at 120ºC, speed Stir 2 until browned.

Transfer the chicken to a clean bowl and set aside.

Step 2

Clean the appliance bowl, fit the Stir Tool and Stir Assist clip.

Add 1 Tbsp olive oil into the appliance bowl.

Heat for 1 minute at 120ºC, speed Off, until hot.

Add onion.

Cook 3 minutes at 120ºC on speed Stir 2 until translucent.

Add peppers and garlic.

Cook for 2 minutes at 120ºC on speed Stir 2 until softened.

Add wine.

Cook for 2 minutes at 140ºC on speed Stir 2 until combined.

Add tomatoes, tomato purée and the chicken.

Step 3

Add cornflour and water into a clean bowl, mix to combine, then add into the appliance bowl.

Cook for 5 minutes at 120ºC on speed Stir 1 until combined.

Cook for 15 minutes at 100ºC on speed Stir 3 until thickened.

 

Serve.
