For the brownies

  • 250 g unsalted butter, cubed, softened

  • 250 g dark chocolate (70%), broken up

  • 6 eggs

  • 70 g coconut sugar

  • 165 g coconut flour

  • 200 g frozen cherries, defrosted, pitted

For the icing

  • 200 g whipping cream

  • 220 g dark chocolate (70%)

Traybake tin medium, KHC30.000WH, KHC30.050GY, KHC30.070GY, K-Beater

Instructions

Step 1

Preheat the oven to 170ºC.

Grease a tin and line with parchment paper.

Add butter and chocolate into a saucepan.

Heat on a low heat until melted.

Step 2

Fit the K-Beater.

Transfer the melted chocolate mixture into the appliance bowl.

Add eggs, sugar and flour.

Mix for about 3 minutes on speed 3 until the batter is smooth and well combined.

Add cherries.

Mix for about 30 seconds on speed 2 until they are fully incorporated into the batter.

Pour the batter into the tin.

Bake for 25 minutes at 170ºC until it is firm to the touch and a light golden brown around the edges.

Let cool in the tin then turn out.

Step 3

Clean the appliance bowl and fit the K-Beater.

Add whipping cream and melted chocolate into the appliance bowl.

Mix for about 3 minutes on speed Min until smooth and well combined.

Let cool slightly.

Spread the mixture onto the brownie.

Cut into squares.
