For the brownies

  • 250 g unsalted butter

  • 250 g dark chocolate (70%), broken up

  • 6 eggs

  • 70 g coconut sugar

  • 165 g coconut flour

  • 200 g frozen cherries, defrosted, pitted

For the icing

  • 200 g whipping cream

  • 220 g dark chocolate (70%)

Instructions

Step 1

Grease a tin and line with parchment paper.

Preheat the oven to 170ºC.

Add butter and chocolate into a saucepan.

Heat on a medium heat until melted.

Step 2

Fit the K-Beater.

Transfer the melted chocolate mixture into the appliance bowl.

Add eggs, sugar, flour and cherries.

Mix for 2 minutes at speed 1 until combined.

Transfer the batter into the tin.

Bake for 25 minutes at 170ºC until a skewer inserted comes out clean.

Remove from the oven and let cool slightly.

Transfer to a cooling rack and let cool completely.

Step 3

Add chocolate into a clean bowl and set aside.

Add whipping cream into a saucepan.

Heat on a medium-high heat until boiled.

Pour the hot cream over the chocolate.

Let rest for 5 minutes.

Stir until smooth.

Let cool slightly for 5 minutes.

Spread the chocolate icing onto the brownie and let set.

Cut into squares.
