1 brioche

450 g plain flour

7 g instant yeast

50 g caster sugar

5 eggs, at room temperature

1.5 tsp salt

1 Tbsp milk

200 g unsalted butter, cubed, at room temperature

1 egg

50 g milk

1 Loaf tin 20 10 6 cm (900g), 1 Kitchen bowl small, KZM35.000GY, KZM35.000RD, KZM35.000GR, Dough Tool

Instructions

Step 1

Grease a loaf tin.

Fit the splashguard, then fit the Dough Tool.

Add flour, yeast, sugar, eggs, salt and milk into the appliance bowl.

Knead for 5 minutes on speed 2 until combined.

Add butter gradually while the machine is running.

Knead for 4 minutes on speed 1 until the dough comes together.

Remove the bowl from the machine and cover with a tea towel.

Prove for 1 hour 30 minutes in a warm place until doubled in size.

Step 2

Transfer the dough to a lightly floured work surface.

Gently pull the edges into the centre to form a ball.

Shape the dough into a log and divide into 10 equal pieces.

Let rest for 10 minutes.

Step 3

Take one piece of dough and shape into a ball.

Repeat this action with the rest of the dough pieces.

Place the dough balls in two rows of 5 into the loaf tin and cover with a tea towel.

Prove in a warm place for 1 hour 30 minutes.

 

Step 4

Preheat the oven to 180ºC.

Add egg and milk into a clean bowl and mix to combine.

Brush the egg mixture over the top of the dough.

Bake for 30 minutes at 180ºC until the loaf sounds hollow when the bottom is tapped.
