Hundreds and Thousands Sponge Cake

This fun cake will be a hit at parties. For the icing, make sure it’s not too runny but should be thick enough to pour onto the cake. Let the icing dry a little before slicing.

Ingredients

Unsalted Butter: 200 g (about ¾ cup)
Caster Sugar: 200 g (about 1 cup)
Egg: 3 (about 150 g)
Vanilla Extract: 1 teaspoon (about 5 ml)
Baking Powder: 1 ⅜ tablespoons (about 20 g)
Plain Flour: 300 g (about 2 ¼ cups)
Milk: 2 tablespoons (about 30 ml)
Icing Sugar: as needed
Water: as needed
Sprinkles: as needed

Method

1 - Pre-heat oven - 180°C
2 - Grease and line a clean square pan with parchment paper
3 - Attach K Beater
4 - Add unsalted butter and caster sugar to the Kenwood Bowl
5 - Mix with splashguard fitted until light and fluffy - 2 min, Speed Max
6 - Then add egg and vanilla extract to the Kenwood Bowl
7 - Mix with splashguard fitted until combined - 2 min, Speed Max
8 - Then add baking powder, plain flour and milk to the Kenwood Bowl
9 - Mix with splashguard fitted until combined - 1 min, Speed Max
10 - Pour batter into square pan
11 - Bake until golden brown and let cool - 180°C
12 - Add icing sugar and water to a clean bowl
13 - Mix until thick
14 - Transfer icing to cake
15 - Spread until covered
16 - Sprinkle with sprinkles
17 - Leave until set
18 - Serve
