Why when I chop hot food does my machine get faster, unlike when I chop cold food?

To prevent splashing hot liquid, the speed on chopping is restricted.When you hold the chop button down the speed will gradually increase, once you take your finger off the button, the chop function will stay at this speed for 2 minutes unless stopped.When you are chopping without heat it will just stop when your finger is removed and works at one speed.
