Why is my unit not allow me to go to an higher speed?

The Cooking Chef is equipped with a safety device that prevent to use the stand mixer at an higher speed while the unit is using for cooking and the temperature reach over 140F (60C).
If temperature cool down lower that limit the unit will be back to the maximum speed.
