Fresh brown rice salad filled with fibre, and vitamins.
Ingredients
150g Broccoli
2 Carrots
1L Water
200g Brown Rice
1 pinch Salt
100g Cherry Tomatoes
80g Rocket
50g Walnuts
4 tablespoons Extra Virgin Olive Oil
1 tablespoon Sherry Vinegar
1 teaspoon Wholegrain Mustard
Tools
Wooden spoon

Large mixing bowl
Kcook bowl
Medium glass bowl
Steamer tray
Method
Fit coarse grating disc (3) to direct prep attachment
Fit direct prep attachment to kCook Multi
Add water, brown rice and salt to the kCook bowl
Add broccoli to the steamer tray
Steam - 20 min, 104°C
Drain and let cool
Turn direct prep attachment to position 2
Grate carrot into a clean large mixing bowl with direct prep attachment
Add cherry tomatoes, rocket and walnuts to the large mixing bowl
Transfer rice to large mixing bowl
Transfer vegetables to large mixing bowl
Mix until combined
Add extra virgin olive oil, sherry vinegar and wholegrain mustard to a clean medium glass bowl
Season
Mix until combined
Drizzle salad with dressing
Serve
