Ginger and Honey Salmon with Quick Pickled Cucumbers

A tasty summer dish, have for lunch or serve with rice, couscous or noodles for dinner. We suggest marinating the salmon for at least 2 hours, preferably overnight if possible but if you are short on time marinating for 30 minutes will still be tasty!

For the marinade

  • 4 Tbsp honey

  • 1.5 tsp fresh ginger, peeled, grated

  • 1.5 tsp garlic, crushed

  • 0.5 tsp fresh chilli, sliced

  • 100 g vegetable oil

  • 40 g spring onion, finely sliced

  • 60 g soy sauce

  • 2 Tbsp rice vinegar

  • 4 salmon fillets

For the pickled cucumbers

  • 1 cucumber, large

  • 75 g red onion, trimmed, peeled

  • 1 tsp sea salt

  • 0.5 tsp pink peppercorns

  • 1 Tbsp white wine vinegar

  • 1 Tbsp caster sugar

  • 1 lemon, zest of

  • 1 handful fresh dill

  • 3 Tbsp olive oil


Utensils

Bowl, Baking dish, Jar, KCL96.004DG, Multipro Food Processor Attachment, Variable Slicing Disc, Thick Slicing Disc

Instructions

Step 1

Select the Chop Herbs preset.

Fit the Knife Blade to the Food Processor attachment.

Add honey, ginger, garlic, chilli, oil, onion, soy sauce and vinegar into the attachment.

Chop for 10 seconds on speed 5 until well combined.

Remove the attachment from the machine.

Transfer the mixture into a clean bowl.

Add salmon.

Cover with plastic wrap and chill in the fridge for 2 hours.

Step 2

Clean the Food Processor attachment.

Select the Slicing / Grating (Soft Ingredients) preset.

Fit the Slicing Disc, setting 3 to the Food Processor attachment.

Prepare the cucumber and red onion for the attachment.

Slice for 1 minute on speed 1, in batches if necessary. 

Remove the attachment from the machine.

Transfer the sliced vegetables into a clean bowl.

Add salt, peppercorns, vinegar, caster sugar, lemon zest and dill and mix to combine.

Transfer the pickled cucumbers into a jar and chill in the fridge.

Step 3

Preheat the oven to 180ºC.

Add the marinated salmon into a baking dish.

Drizzle with olive oil.

Bake for 10 minutes at 180ºC until the salmon is flaky when pressed with a fork.

Serve the salmon with chilled pickled cucumbers.
