Chorizo and Chilli Jam

Savoury, sweet and spicy all at once, this condiment is perfect when spread on hot toast and topped with a couple of crispy fried eggs, or served with a strong, hard cheese and crackers.

200 g chorizo, finely diced

150 g red onion, diced

1 garlic clove, finely chopped

2 red chillies, seeds removed, finely chopped

180 g tomatoes, seeds removed, finely diced

200 g roasted red pepper, drained, diced

200 g demerara sugar

100 g red wine vinegar

salt, as needed

ground black pepper, as needed

Bowl, Jar, KCL96.004DG, Stir Tool, Stir Assist Clip, Knife Blade, Multipro Food Processor Attachment

Instructions

Step 1

Fit the Stir Tool & Stir Assist Clip.

Add chorizo into the appliance bowl.

Cook for 10 minutes at 140ºC on speed Stir 2 until crisp.

Use a slotted spoon to remove the chorizo and place into a bowl, leaving the oil in the appliance bowl.

Set aside the chorizo.

Step 2

Add onion, garlic and chillies into the appliance bowl.

Cook for 8 minutes at 110ºC on speed Stir 2 until fragrant.

Add tomato, red pepper, sugar, vinegar, salt and pepper.

Cook for 3 minutes at 140ºC on speed Stir 3 until boiling.

Cook for 42 minutes at 100ºC on speed Stir 4 until the liquid has reduced.

Remove the bowl from the machine and let cool for 30 minutes.

Step 3

Fit the Knife Blade to the Food Processor attachment.

Transfer the tomato mixture and chorizo into the attachment.

Blend for 1 minute on speed 2 until smooth.

Use as desired.

 

Tip: This can be stored in a sealed, sterilised jar for 6 months.
