Rhubarb and Basil Shrub

A shrub is a fruit-based vinegar syrup that is used in drinks and cocktails. Mix this one with soda and crushed ice for a refreshing drink or mix with soda and gin for a delicious cocktail.

400 g rhubarb, trimmed, coarsely sliced

400 g caster sugar

10 g fresh basil, leaves only

50 g water

400 g apple cider vinegar


Utensils

1 Jug, 1 Sterilised bottle, KCL96.004DG, K-Beater, Blender Attachment

Instructions

Step 1

Working in two batches, add rhubarb and sugar into the Blender attachment.

Blend for 30 seconds on speed Max until smooth.

Remove the attachment from the machine.

Transfer the blended rhubarb into the appliance bowl.

Step 2

Fit the K-Beater.

Add water and basil into the appliance bowl.

Heat for 10 minutes at 60ºC, on speed Stir 3, until the liquid has reduced.

Let cool slightly and then remove the basil leaves.

Add vinegar.

Mix for 2 minutes on speed Min until combined.

Step 3

Strain the mixture through a muslin cloth into a jug and let cool.

Pour the shrub into a sterilised bottle.

Chill in the fridge until needed.

Use as desired.

 

Tip: Store in the fridge in a sterilised bottle for up to one month.
