Strawberry Thyme Shrub

A shrub is a fruit-based vinegar syrup that is used in drinks and cocktails. Mix this one with lemonade and crushed ice for a refreshing drink or mix with soda and vodka for a delicious cocktail.

Instructions

Step 1

Fit the Knife Blade.

Add strawberries and sugar into the appliance bowl, attach the lid with the filler cap fitted.

Blend for 1 minute on speed 12 until smooth.

Add water and thyme.

Heat for 10 minutes at 60ºC, on speed 1, until the liquid has reduced.

Let cool slightly and then remove the thyme.

Add vinegar.

Mix for 2 minutes on speed 5 until combined.

Step 2

Strain the mixture through a muslin cloth into a jug and let cool.

Pour into a sterilised bottle.

Chill in the fridge.

Use as desired.

 

Tip: Put the shrub in a sterilised bottle and store in the fridge for up to one month.
