Peach and Ginger Shrub

A shrub is a fruit-based vinegar syrup that is used in drinks and cocktails. Mix this one with lemonade and crushed ice for a refreshing drink or mix with soda and spiced rum for a delicious cocktail.

Instructions

Step 1

Working in two batches, add peaches and sugar into the Blender attachment.

Blend for 30 seconds on speed Max until smooth.

Transfer the blended peaches into the appliance bowl.

Step 2

Fit the K-Beater.

Add water and ginger into the appliance bowl.

Heat for 10 minutes at 60ºC, on speed Stir 3, until the sugar has dissolved.

Let cool slightly.

Add vinegar.

Mix for 2 minutes on speed Min until combined.

Step 3

Strain the mixture through a muslin cloth into a jug and let cool.

Then pour into a sterilised 1-litre bottle.

Chill in the fridge.

Use as desired.

 

Tip: Put the shrub in a 1-litre sterilised bottle and store in the fridge for up to one month.
