One can kidney beans
One can chopped tomatoes
Handful of red lentils
2 cloves of garlic
Sprinkle of oregano
Squirt of tomato purée
One fresh chilli
Slug of red wine
Handful fresh coriander
Lime juice to taste
Sneaky bit of bacon if any available
Serve with.... Tacos, grated cheese and soured cream.

This is our go to dish for whenever we think we don't have anything in to cook. Most of the ingredients are store cupboard ones, and those that aren't can be substituted,or omitted. It is one of the first things I remember my now husband cooking for me and is now a firm favourite with our children.
Fry onion chillies and garlic. (Add bacon here if using) Add chopped carrots, lentils, beans and tomatoes. Add herbs and seasonings. Slowly add wine and a little water if needed. Simmer on a low heat for approx 20 minutes. Serve with tacos, chopped iceberg lettuce, grated cheese and soured cream.
