Ingredients

½ jar of pineapple jam
3-4 crushed meringues
1-2 shots (25 ml) of rum
300g of crème fraiche

This exotic treat is deliciously simple to make. You could even substitute the rum for a pineapple liqueur which I experimented with after bringing the liqueur back from a trip to Cuba!

Method

  1. Mix up all the ingredients together and freeze in an ice cream tub or individual ramekins.
