800g of apples or apples and pears, peeled and cored
Sugar to taste if using cooking apples but none should be needed if eating apples are used

Peasant Pudding is a base of puréed apples topped with an oaty topping. It is delicious with cream for a pudding or with thick yogurt for breakfast.
- Make apple purée using 100ml of water and cook for around 6 minutes then process until smooth or buy ready made.
- Melt the butter and fold in the oats and sugar, mixing until all the oats are well coated. Put oats on top of apple and chill.
