Ingredients

800g of apples or apples and pears, peeled and cored
100ml water
Sugar to taste if using cooking apples but none should be needed if eating apples are used
6oz oats
2oz demerera sugar
3oz butter

Peasant Pudding is a base of puréed apples topped with an oaty topping.  It is delicious with cream for a pudding or with thick yogurt for breakfast.

Method

  1. Make apple purée using 100ml of water and cook for around 6 minutes then process until smooth or buy ready made.  
  2. Melt the butter and fold in the oats and sugar, mixing until all the oats are well coated. Put oats on top of apple and chill.
