Ingredients

½ pint double cream

2 egg yolks

2 tsp castor sugar

2 tbsp Demerara sugar

  • Place the cream, egg yolks and castor sugar in a basin standing over a saucepan of hot water
  • Whisk over the heat, using a Hand Mixer, until the mixture thickens. Do not boil.
  • Pour into serving bowls, cool and cover with Demerara sugar, and brown slowly under the grill until sugar has melted
