Fruit & Nut Bran Loaf

Method

  1. Add the berries, cherries and hazelnuts when the machine makes an audible sound during second kneading cycle: see menu timetables on page 44- 48 (BM260) and page 49- 53 (BM366).

Tip
tsp = 5ml teaspoon
tbsp = 15ml tablespoon

Ingredients

For 1kg loaf 
380ml water 
3tbsp clear Honey 
25g wheat bran  
1tbsp skimmed milk powder   
2tsp salt  
25g butter   
600g unbleached white bread flour   
1 1/2tsp easy blend dried yeast   
50g skinned hazelnuts, roasted & chopped 

For 750g loaf 
280ml water
2tbsp clear honey  
15g wheat bran 
1tbsp skimmed milk powder 
1 1/2tsp salt  
25g butter 
450g unbleached white bread flour 
1 1/2tsp easy blend dried yeast 
50g skinned hazelnuts, roasted & chopped

For 500g loaf
245ml water 
1tbsp clear honey  
15g wheat bran  
2tsp skimmed milk powder
1tsp salt   
15g butter 
350g unbleached white bread flour  
1tsp easy blend dried yeast 
30g skinned hazelnuts, roasted & chopped
