Citrus & Walnut Bread

Method

  1. Add the walnuts, orange and lemon rind when the machine makes an audible sound during the 2nd kneading cycle: See menu timetables on page 44-48 (BM260) and page 49-53 (BM366).

Tip
tsp = 5ml teaspoon 
tbsp = 15ml tablespoon

Ingredients

For 1kg loaf 
230ml lemon yoghurt 
150ml orange juice 
40g caster sugar 
1 1/2 tsp salt   
40g butter  
550g unbleached white bread flour 
2tsp easy blend dried yeast  
50g walnuts chopped  
2tsp grated lemon rind   
2tsp grated orange rind

For 750g loaf 
170ml lemon yoghurt   
125ml orange juice  
25g caster sugar   
1tsp salt   
40g butter   
450g unbleached white bread flour   
1 1/2tsp easy blend dried yeast   
40g walnuts chopped  
2tsp grated lemon rind 
2tsp grated orange rind

For 500g loaf 
135ml lemon yoghurt 
110ml orange juice 
15g caster sugar 
1/2tsp salt  
25g butter 
350g unbleached white bread flour 
1 1/2tsp easy blend dried yeast 
25g walnuts chopped 
1tsp grated lemon rind 
1tsp grated orange rind
