Now everyone can enjoy a Christmas cake! You can swap the rum for water instead. Serve as it is or decorate with marzipan.

  1. Attach the Stir Tool
  2. Add dried mixed fruit, orange, lemon, rum and coconut oil to the Cooking Chef XL Bowl
  3. Lift the Cooking Chef head and fit the heat shield
  4. Cook with splashguard fitted - 1 min, 104°C, Speed 1
  5. Cook with splashguard fitted - 5 min, 95°C, Speed 1
  6. Let cool - 30 min
  7. Add chia seeds and water to a clean small bowl
  8. Mix then set aside
  9. Grease and line a clean springform tin with parchment paper
  10. Pre-heat oven - 150°C
  11. Add almond meal, baking powder, plain flour, mixed spice, ground cloves, ground cinnamon, flaked almonds and vanilla extract to the Cooking Chef XL Bowl
  12. Transfer content of small bowl to Cooking Chef XL Bowl
  13. Attach the K-Beater
  14. Mix - 2 min, Speed 2
  15. Spoon batter into springform tin
  16. Bake - 2 hr, 150°C
  17. Remove from oven and let cool
  18. Serve
