For the Orange Sauce:5ml (1 tsp) butter5ml (1 tsp) sugar150ml (5fl oz) fresh orange juice150ml (5fl oz) chicken stock1.2cm (½ inch) piece fresh root ginger, grated5ml (1 tsp) soy sauce5ml (1 tsp) cornfloursalt and freshly ground black pepper
