Rather than the temperature in degrees, the Kenwoood Chef Patissier XL has 9 warming levels to choose from. Think of it like a hob setting, turn it up for more heat and turn it down for less. It has been carefully designed to work well with common baking tasks such as melting, proving and sabayon, but it will not boil water.
