I’ve set the temperature to 180°C but the temperature only reaches 100°C. Why is this?

The temperature will not go above 100°C when liquids are being heated in the bowl as this is boiling temperature. Also, the addition of new ingredients will often reduce the bowl temperature until they come up to temperature.
