Week 5 – Spaghetti Vongole

We were staying at friends so I took the Kenwood Chef Titanium with us!  I invited my dad and his wife as well. Looking at the recipe and watching the video I decide this looked a challenging dish I hoped to impress them with.

The pasta dough was so easy to make! It was looking crumbly so I carefully added a teaspoon of water.  The Kenwood Chef Titanium’s Dough Hook attachment pulled it all together and gave me smooth dough.Emma Pearce Week 5Emma Pearce Week 5Emma Pearce Week 5

The Pasta Roller attachment was easy to fit and use, I was impressed the dough didn't stick.  The kids loved watching it go through, especially when the Spaghetti Cutter attachment turned the dough into spaghetti!

I made a focaccia to go with it.  I used the dough hook and again had beautiful smooth dough.  

I struggled in getting clams so I settled with mussels. Not everyone is a fan of mussels so I cooked some chicken.  The spaghetti cooked perfectly in two minutes.

 My dad was particularly impressed; he liked the texture and fresh taste of the pasta, he also said the mussels were delicious and the chicken worked well as well. The focaccia was soft and tasty. Big smiles all around!  

The kids can't wait to make more spaghetti, and I can't wait to make this dish again.

Week 4 – Thai Minced Turkey Salad

 This recipe was full of flavours that I love but some ingredients that I have never cooked with before so I arranged for a couple of friends to come round and share this with me.

Most of the ingredients were prepped using the Food Processor attachment, which I just love!  Everything was chopped in a couple of pulses.  We all enjoyed watching it transform the turkey, especially the children.

Everything was cooking nicely and the house was filled with an amazing aroma. I then blended the sauce, but the fish sauce had such a potent smell I was worried I had put too much in. But I carried on, hoping for the best.  The Multi Mill attachment chopped herbs very quickly and evenly.

To serve I roasted some halved peppers and used the lettuce leaves. The girls were really impressed, and I was relieved – the dish full of flavour and the fish sauce was fine!  There wasn't a scrap left - my friends even said they would like to try cooking it. 

My Kenwood Chef Titanium did it again - and I now have new confidence in using bold flavours!

Week 3 – Family Friendly Two Way Burger

This recipe looked exciting!

All ready to go I put the Food Mincer attachment onto the Kenwood Chef Titanium.

It looked a bit daunting, but it was easy to fit and worked so well! I simply turned on the mixer, fed the meat into the funnel and watched it do all the work - brilliant!

The Multi Mill attachment was easy to use and did a great job chopping my onion and garlic.

The k-Beater attachment combined the mixture, and it smelt amazing already!

My husband watched as I shaped and filled the burgers.  He was keeping an eye on the chilli flakes ensuring that I didn’t put any near his (I am yet to regain his trust when using chilli).  I sandwiched the flakes between some brie and thought they were looking pretty good.

They cooked nicely and didn't fall apart!  The only thing was the mozzarella ones seemed a bit watery, but the brie was lovely, especially with onion chutney.

Week 2 – Banana Bread

This week’s recipe sounded like quite a challenge.  Having never used gluten free flour, made a dairy free or sugar free cake before, I was nervous.

I set to it, this time without any children around to secretly turn up the oven.

The Kenwood Chef Titanium was really easy to fit the Food Processor attachment.  The pulse function had the nuts perfectly chopped in seconds.  The bananas became super smooth with just a few twists of the dial - much easier than my old fashioned fork in a bowl method.  The K beater made easy work of combining the wet and dry ingredients.

It was going well, so I poured it into the tin.  Here was my mistake!  I hadn't set my K beater attachment up properly and it hadn't mixed the bottom layer of flour perfectly.  A quick adjustment and I was good to go - this time it mixed everything.

The bake went well, the smell was amazing.  And to my surprise it had risen fantastically!

I was so pleased with the outcome.  My son in particular loved this bake.

Week 1 - The Tuile Biscuit

Being the first week in, I watched the instruction video 5 times and read the recipe at least 10, before I felt I was ready to begin! I carefully measured my ingredients and even managed to separate my eggs successfully, so I was feeling pretty good! My new Kenwood Chef Titanium had my butter and icing sugar creamed beautifully in a matter of seconds, so I confidently added my eggs and some of the flour.

I obviously got slightly too confident as my mixture started to look rather slimy and lumpy, so I shakily added the rest of the flour. The brilliant in-bowl illumination feature helped me see my beautiful mixture - it had unfortunately split... I persevered and kept mixing with my flexi beater attachment and thankfully the mix came together; the result was silky smooth.

I cut a template from an ice cream tub; the leaf shape went wrong but I somehow ended up with a mushroom shape! I decided to top my biscuits with grated chocolate, chocolate with orange zest and cinnamon sugar. 

I think they all baked well, except for the batch where I found out my son turned the oven temperature up without me noticing! The chocolate with orange zest were voted the tastiest and all the flavours put smiles on our faces - a first for our kitchen!
