Vegan Meringue Berry Sponge

A fluffy sponge cake topped with marshmallow-y meringue, whipped cream and fresh berries. We have used a mix of strawberries, raspberries, blueberries and cherries.

Istruzioni

Step 1

Making the sponge

Preheat the oven to 180ºC.

Line the traybake tin with parchment paper.

Fit the K-Beater.

Add milk and vinegar into the appliance bowl.

Mix by hand until combined and let rest for 5 minutes.

Sift in flour, baking powder, bicarbonate soda and salt.

Add caster sugar, oil and vanilla extract.

Mix for about 2 minutes on speed Min until combined.

Pour batter into the traybake tin.

Bake for 30 minutes at 180ºC, until a skewer inserted comes out clean.

Remove from the oven and let cool in the tin for 10 minutes.

Transfer the cake to a cooling rack and let cool completely.

Step 2

Making the meringue

Add aquafaba into a saucepan.

Heat on a medium heat until reduced by half.

Tip: There should be about 160 g of aquafaba left.

Transfer into a jug and let cool.

Step 3

Preheat the oven to 130ºC.

Clean and line the traybake tin with parchment paper.

Clean the appliance bowl, fit the splashguard and then fit the Whisk Tool.

Add the cooled aquafaba, cream of tartar, vanilla extract and xanthan gum into the appliance bowl.

Whisk for about 1 minute 30 seconds, speed Max, until foamy.

Add sugar gradually, a few tablespoons at a time, when the machine is running.

Whisk for about 3 minutes, on speed 4, until thick and glossy.

Transfer the meringue into the tin and level with a spatula.

Bake for 50 minutes at 130ºC, until set and dry.

Step 4

Making the topping

Add jam, lemon juice and berries into a clean bowl.

Mix until coated and set aside.

Step 5

Making the filling

Clean the appliance bowl, fit the splashguard and then fit the Whisk Tool.

Add cream and icing sugar and vanilla extract into the appliance bowl.

Whisk for about 1 minute on speed Max until soft peaks have formed.

Gently spoon a thin layer of the whipped cream onto the cake.

Add a layer of sliced strawberries.

Place the meringue on top.

Spoon on the rest of the cream.

Top with the berry mixture.

 

Serve.
