Step 1

Cut the butter into cubes and leave at room temperature to soften.

Step 2

Fit the K-Beater to the machine.
Grease the muffin tin.

Step 3

Add butter, flour, salt and sugar into the Mixer bowl.
Attach the Mixer bowl to the machine and fit the splashguard.
Mix on speed 2 for 2 minutes.

Step 4

Add egg and milk into the Mixer bowl.
Mix on speed 2 for 1 minute.
Place the pastry onto a work surface and knead together.
Wrap in plastic wrap.
Chill in the fridge for 30 minutes.

Step 5

Preheat the oven to 180ºC.
Place the pastry onto a lightly floured work surface.
Roll out the pastry until 1 mm thick.
Use a pastry cutter to cut out circles slightly bigger than the muffin pan holes.
Place the pastry circles into the muffin tin holes and lightly press down to shape.
Spoon jam into the muffin tin evenly.
Bake for 15 minutes at 180ºC.
Leave to cool in the muffin tin for 5 minutes.
Turn out onto a wire rack and let cool.


Serve.
