PANFORTE
INGREDIENTS
100g semi- sweet chocolate (chopped and melted)
120g almonds (toasted and chopped)
120g hazelnuts (toasted)
170g mixed fruits/peel
Half tsp mixed spices
70g plain flour
1 tbsp cocoa powder
100g caster sugar
2tbsp honey
snow powder (for dusting)
METHOD
1. Line a 9 inch pie pan with greaseproof paper
2. Preheat oven at 170 deg celsius
3. Pour in the almonds, hazelnuts and mixed fruits/peels in a mixing bowl and mix well
4. Sprinkle in the plain flour and cocoa powder and mix evenly. Leave aside
5. Mix sugar and honey in a saucepan. Boil on medium heat
6. Keep stirring in the sugar mixture until light golden
7. Lower heat and stir in the melted chocolate
8. Quickly pour in the fruit and nut mixture. Stir as evenly as possible
9. Pour the mixture into a pie pan and press tightly to all corners
10. Bake for about 20-25 minutes
11. Cool slightly before cutting
